This is perfect for those moments when you’re short on time and can’t go through the usual steps of salting, squeezing, grating, slicing, dredging, battering, and frying.
Ingredients You Need
– 500g of Zucchini (or four small Zucchinis),
– 2 tablespoons of Breadcrumbs
– 2 tablespoons of Parmesan
– Olive Oil
– Salt and Pepper
How to Prepare
- Pre-heat your oven to 180 Degrees Celsius & line a baking tray with baking paper.
- Cut the zucchinis lengthwise.
- Toss with oil, salt & pepper.
- Place the zucchinis curved side down on the baking tray. Place closely together to ensure minimal gaps (so all the Breadcrumbs and Parmesan are captured).
- Sprinkle the breadcrumbs and Parmesan on top.
- Drizzle with olive oil – just 2 teaspoons.
- Bake for 12 minutes in a preheated oven at 180 Degrees Celsius.
- Bake until the Parmesan turns golden and the zucchini is tender (but not mushy).
- Safely remove from the oven, allow a few minutes for cooling and enjoy!
